BELUGA CAVIAR

Light to dark steely grey, a product of its own rarity and exquisite creamy flavour. This Huso Huso pure breed Sturgeon is the largest member of the family and can weigh over a ton, however typically under 90 kilograms with about 15 kilos of truly exceptional lightly salted at 3.5% “Malossol” Beluga Caviar.

The Caviar roe size is 3.1 to 3.4mm in diameter. The Beluga may mature at be about 20 years old and live to 80 years in the wild. This Beluga Sturgeon lives in a semi wild environment, in waters off the Caspian Sea.

 
 

OSETRA CAVIAR

Claiming primacy over the mythical family of sturgeon caviars, Osetra is defined by a sensual and silky feel, as it pirouettes across the tongue, you will drift into a paradise of scintillating sensations, made ever joyous by its heavenly aroma of bold sea vibes. Slightly stronger taste than the Beluga, due to the Osetra sturgeon swimming in deeper waters.

Unlike aqua-farmed Osetra, which dramatically disturbs the taste and texture of caviar - our Iranian Osetra, produced from sturgeons bred in their native environment, are able to simultaneously give pleasure to lovers of subtlety and those with a passion for spirited flavours.

 
 

SEVRUGA CAVIAR

From the Acipenser Stellatus Sturgeon, being the smallest of the Sturgeon species which in turn produces the smallest eggs, these are light grey to dark. Sevruga Caviar offers a full and delicate flavour appreciated by many, lightly salted at 3.5% known as “Malossol” with a Caviar roe size of 2.9mm in diameter.

This Sturgeon matures between 7-10 years go age and lives in a semi wild environment of natural lakes, and nowadays it is more rare than Beluga as not many farms are producing Sevruga Caviar.
